Vietnamese Dumplings

Welcome to Chinese Cooking. My name is Xiao Wei, even at a early age I have always had a strong passion for Chinese Cooking. My family still live in northern Chinese, where I visit each year and pick-up new Asian/Chinese recipes.

Ingredients:
25 – 30 Wonton Wrappers
250g Mince Pork
50g Soaked Tree Fungus
1 Small Onion
1 Clove
2 Cloves Garlic
1 Green Chilli
10g Coriander
1 Tsp Cornflour
½ Tsp Ground White Pepper
2 Tbsp Water Mixture
Salt To Taste

Method:
1. Finely chop the tree fungus
2. Finely chop the onion
3. Finely chop coriander, chilli and garlic
4. Crush or grind the clove
5. Place the pork in a large bowl, add the tree fungus, onion, coriander, chilli, garlic, salt, pepper and crushed clove, mix all ingredients together
6. Heat 2 Tbsp oil in a wok, add the pork mixture into the wok and fry for 5 minutes, remove and cool – this is the filling
7. Combine the cornflour and water. Take one wonton sheet, wet the edges with the cornflour and water mixture to help sealing
8. Place 1 Tsp of the filling onto the wrapper like sausage shape
9. Roll and fold the wrapper, then apply pressure to the two ends to seal, place onto a dish
10. Repeat this with the remaining ingredients till all are used for the dumplings
11. Boil 1 litre of water in a steamer, place dumplings into steamer, cover and steam for 5 minutes
12. Turn off the heat and remove lid from steamer
13. Transfer dumplings onto a dish and serve with vinegar if you wish
