Sweet & Sour Spare Ribs – Chinese Style Cooking Recipe

Welcome to Xiao’s Chinese Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

500g Ribs
2 Spring Onions
10g Ginger
1 Star Anise
35g Rock Sugar (or Normal Sugar)
2 Tbsp Cooking Wine
3 Tbsp Dark Vinegar (or Malt Vinegar)
2 Tbsp Dark Soy Sauce
½ Tsp Sesame Seeds
Salt To Taste

1. Roughly chop the white part of the spring onions and slice the ginger
2. Place the ribs in a saucepan, add cold water and then cook for 2 minutes after reached boiling point
3. Remove the ribs, drain well and reserve the stock
4. Heat 1 Tbsp of oil and the rock sugar in a wok
5. Stir and cook until the sugar has melted and light brown on medium heat
6. Add the ribs, soy sauce, cooking wine and then stir fry for 2 minutes
7. Add 700ml of the rib stock, spring onions, ginger, star anise and vinegar
8. Cover the wok and cook for about 20 minutes – stir occasionally
9. When the liquid has thicken and in deep colour, remove the lid
10.Add salt and sesame seeds, stir and cook for a minute
11.Transfer onto a dish and serve with steamed buns or rice
