Stir Fry Red Onion & Egg Chinese Style (Chinese Cooking Recipe)

Welcome to Chinese Cooking. My name is Xiao Wei, even at a early age I have always had a strong passion for Cooking. My family still live in northern Chinese, where I visit each year and pick-up new Asian/Chinese recipes.

4 Small Red Onions
4 Eggs
3g Ginger
½ Tsp Ground Sichuan Pepper (or white pepper)
Salt to Taste

1. Finely chop the ginger.
2. Cut the onions into wedges.
3. Break the eggs into a bowl and beat until light.
4. Heat 1 Tbsp of oil in the wok and pour in the egg.
5. Stir fry the eggs until they become scrambled then remove from wok.
6. Heat 2 Tbsp of oil in the same wok and add the ginger and ground pepper.
7. Fry for few seconds before adding the onions then stir fry for a minute.
8. Add the eggs, salt and stir fry for a minute.
9. Transfer onto a dish and serve with rice.
