Sichuan (Szechuan) Spicy Shredded Chicken (Asian Style Cooking Recipe)

Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.

300g Chicken Breasts
3 – 6 Small Dried Chillies
4g Sichuan Peppercorns
20g Roasted Peanuts
1 Tsp Sesame Seeds
3 Cloves Garlic
30g Coriander
2 Spring Onions
1 Tsp Chicken Powder
1 Tbsp Light Soy Sauce
1 Tbsp Chilli Oil
1 Tsp Cornflour
Salt to Taste
Hot Plate

1. Finely chop the garlic and spring onion
2. Roughly chop the chillies and coriander
3. Thinly slice the chicken and cut into thin threads
4. Place chicken in a mixing bowl, add a pinch of salt, half of the chicken powder, cornflour and 1 Tsp oil. Mix well and leave to marinate for 5 minutes
5. Roughly grind the peanuts
6. Heat the hot plate
7. Meanwhile, heat 2 Tbsp of oil in the wok
8. Add garlic, chillies and Sichuan peppercorns into the wok, fry till aromatic
9. Add chicken and stir fry for 3 – 5 minutes until the chicken turns pale
10. Add chicken powder, light soy sauce and chilli oil. Stir fry for a minute
11. Add a pinch of salt, sesame seeds and peanut. Stir fry for 30 seconds
12. Add spring onion, coriander and stir
13. Transfer to the hot plate and now ready to enjoy
