This is my second recipe video for Chinese New Year 2021.
Food has a lot of symbolism at this time of year, and for the Year of the 0x 2021, I thought I would showcase Sheng jian bao, which are pan fried dumplings from the Shanghai region of China.
Traditionally, dumplings in general are considered a ‘lucky’ food, as they are said to resemble old fashioned gold ingots.

My adaptations are as a result of not having the ingredients to make the pork aspic from scratch, so I’ve substituted their required amount of stock with store bought stock. I’ve also added some sugar to the dough mix.
I would also add that I’m not particularly skilled at filling and folding dumplings, so I did end up with some of the filling left over, which you can freeze. .
