The BEST Chinese Pork Dumplings (猪肉饺子)

❤️️Ingredients:
For the filling:
¾ pound ground pork (12 oz.)
1 cup cabbage, finely chopped (about 1½ inch wedge)
¾ cup Asian chives, cut into ¼ inch (or green onion)
1 Tablespoon ginger, minced (about 1½ inch knob)
3 Tablespoon water
2½ Tablespoon soy sauce
1 Tablespoon Shaoxing cooking wine
¾ teaspoon salt (or to taste)
2 teaspoon sesame oil

For the dumpling wrapper, if making from scratch:
1¼ cup all-purpose flour
½ teaspoon salt
2 teaspoon ube powder ( optional; aka purple sweet potato powder)
½ cup boiling water

For the dumpling sauce:
1 teaspoon vegetable oil (or any other cooking oil)
1 clove garlic, minced
¼ teaspoon crushed red pepper (or to taste)
3 Tablespoon soy sauce
1 teaspoon rice vinegar (or white distilled vinegar)
2 teaspoon granulated sugar
½ teaspoon sesame oil
Sliced green onions & sesame seeds (optional)
