  1. 好棒的作品!I doubled your recipe and used a weighing scale to weigh the flour and hot water. I was unable to obtain a pliable dough after resting it for 10 minutes. The dough was quite sticky so dough kneading was impossible. I scraped out the sticky dough onto a lightly floured board and sprinkled it with tapioca starch before cutting into small pieces. That stopped the stickiness. The dough is smooth but because it lacked the stretchy and springy feel like yours, I could not pleat beautifully like yours. Although the rolled out skin was delicate to handle, I’m happy that after steaming, it had the 晶莹剔透 appearance and nice to eat. I suspect different brand flour, the water absorption level is different. thank you for sharing your recipe!
