Crispy Potato Egg Fritters Chinese Style Recipe (by Xiao’s Kitchen)

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

200g Potatoes (cut into very thin threads)
100g Carrots (cut into very thin threads)
2 Tbsp Plain Flour
5 Eggs
½ Tsp Chinese 13 Spice or 5 Spice
Salt to Taste

1. Place the potato and carrot threads in a large mixing bowl
2. Add 1 egg, 13 spice, pinch of salt and flour, mix well clockwise
3. Heat 2 Tbsp oil in a frying pan over low to medium heat
4. Place a serving spoon of the mixture from above into frying pan, and then make a hole in the middle to create a ring
5. Break an egg in the hole, fry over medium/low heat for 2 minutes, and then turn and fry the other side for 2 minutes until cooked
6. Place onto a dish, serve & enjoy
