Chinese Style Crispy Lemon Chicken (Xiao’s Kitchen Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

450g Chicken Breasts
1 Spring Onion (for garnish)
3 Tbsp Lemon Juice
1 Tbsp Rice Wine
1 Lemon Zest
1 Tbsp Sugar
1 Tbsp Cornflour
100g Self Raising Flour
150ml Milk
80ml Water
1 Tsp Sesame oil
Salt To Taste

1. Finely chop the spring onion
2. Cut chicken into medium thick slices and place in a bowl
3. Add rice wine and pinch of salt, mix well and then leave to marinate for 10 minutes
4. Place the self-raising flour in a large bowl, add salt and gradually add the milk and mix into a batter mix
5. Combine the cornflour and water in a small bowl and mix well
6. Place the chicken in the batter mix and mix well
7. Heat 1 litre of oil in the wok
8. Add the chicken into the hot oil one piece at a time, deep fry until golden then remove and drain – do this in batches
9. Place the chicken onto a dish
10. Boil the water in a saucepan, add the lemon zest, lemon juice, sugar, sesame oil, pinch of salt and stir
11. Add the cornflour mixture into the saucepan and bring to the boil and then remove from heat
12. Place the chicken back into the hot oil for half a minute until crisp, remove and drain
13. Pour the sauce over the chicken, garnish and serve
