Chinese Pumpkin Stew Recipe (Chinese Vegetarian Stew Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

lot’s of us making pumpkin pie or roast pumpkin. Why not try this unique dish?

Half a medium sized pumpkin – about 500g in weight
3 medium potatoes
4 celery sticks
4 red chilli peppers
4 cloves garlic
1cm ginger root
2 spring onions
1 teaspoon ground red pepper
4 tablespoons soy sauce
2 tablespoons sugar
Small bunch of fresh coriander
1 red onion
150ml chicken or vegetable stock

Chop garlic and ginger
Place on a dish for later
Chop the spring onions and coriander
Place on a dish for later
Thinly slice chilli peppers
Chop red onion coarsely
Thinly slice celery
Place these on a dish for later
Cut potato into bite-sized chunks and place on a dish for later
Cut pumpkin into halves
Cut off the soft flesh and remove the seeds
Cut the pumpkin into smaller sizes so it’s easier to peel
Peel and cut into 1-inch chunks
Place on a dish for when cooking
Heat 3 tablespoons oil in a wok
Add garlic, ginger and ground red pepper
Fry for few seconds
Add potato to the wok and fry for a minute
Add pumpkin and fry for a minute
Add soy sauce and fry for 3 to 5 minutes
Add stock and bring to the boil
Place a lid on the wok
Reduce heat to medium
Cook for 25 to 30 minutes
Add sugar, salt to your taste and mix
Add the chopped red onion, celery and chilli pepper into the wok
Gently stir and cook for further 2 minutes
Transfer to a dish and serve
