Chinese Chicken & Sweet Potato (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

6 Chicken Drumsticks
500g Sweet Potatoes
3 Spring Onions
10g Ginger
2 Tbsp Light Soy Sauce
2 Tbsp Oyster Sauce
2 Tbsp Cooking Wine
1 Tbsp Dark Soy Sauce
Salt to Taste

1. Finely chop the spring onions and ginger
2. Cut sweet potato into bite-size pieces
3. Chop chicken drumsticks into bite-size pieces
4. Place chicken drumsticks in a bowl, add 500ml of cold water and leave to soak for 20 minutes
5. Squeeze the water from the drumsticks, then place in another bowl
6. Add 1 Tbsp of the cooking wine and pinch of salt, mix and leave to marinate for about 10 minutes
7. Heat half a litre of oil in the wok, deep fry sweet potato for 5 minutes till cooked through and golden, remove from oil and drain
8. Place chicken in the wok and deep fry for 5 minutes, remove and drain. Discard the oil
9. Heat 1 Tbsp oil in the wok, add ginger and half of the spring onion. Fry for few seconds
10. Add the chicken and stir-fry for a minute
11. Add the soy sauce, oyster sauce and remaining cooking wine. Stir-fry for 3 to 5 minutes till evenly coated
12. Add 500ml to 800ml of boiled water – ensure the water level is just covering the chicken
13. Bring to the boil and then cover the wok. Turn heat to low and cook for 10 minutes till meat is tender
14. Turn heat to high to reduce liquid to minimum
15. Add the sweet potatoes and stir, then cook for 2 minutes
16. Add remaining spring onions and salt to taste, and stir
17. Transfer onto a dish, garnish and serve
