Happy Friday! I hope everyone had a wonderful week. What did you guys do last week? My Dutch friend Daphne Groeneveld was in town and we did some activities outside which was really nice! I wish I would enjoy more of my time out but we have been working a lot at home!
Last week I went to New York City for a modeling job and extended the trip a couple of extra days. I was at first a little nervous to go back because I didn’t really know what to expect since I had never been back since I moved away. The travel and the 4 day quarantine was honestly not that bad and despite the cold the city did feel alive! I was grateful that I was able to travel and switch up the change of scenery a little bit.
How are you guys doing during this Pandemic? Do you feel 2021 is getting better or worse?
On the positive side, for all my Asian subscribers here I want to say Happy Lunar New Year! I wish everyone all the love, luck and good health this year. I wanted to celebrate this with you guys with a delicious home made dumpling recipe Jessie’s mum gave us.

1 package ground Chicken
1 tbsp soy sauce
1 tsp salt
1 tsp mirin optional
1 tbsp dry sake
1 tsp ginger
1/2 cup chopped scallion
1/3 cup chopped Cilantro optional
Cornstarch optional to help with moisture
1 tbsp sesame oil
For chicken filling – mix all in a bowl
4 scrambled eggs
2 oz dried shiitake Mushroom chopped finely
6 Minced baby carrot
1 pack Chives
1 tsp salt
1 tsp soy sauce
Dash black pepper
1 tsp mirin
1 teaspoon sesame oil
For Egg Dumpling Filling (Vegetarian):
• Heat up oil in pan. Pour in the egg when the oil smokes. Dish out as soon as there is no more liquid. Coarsely chop when it cools down.
• Add Chinese chive, shiitake mushroom, minced carrot, salt, soy sauce, mirin, black pepper, and sesame oil. Mix well.
• Make dumplings!
3 tbsp Soy sauce
1 tbsp coconut sugar
Chili oil optional
1/2 tsp Sesame oil
