Spain’s national dish, Paella, was originally a “stew” invented by dockers.

However, with the word “delicious”, it actually ranks among the forefront of Western food, becoming a world-famous dish as famous as French snails and pasta.

My risotto is derived from a family recipe from a Spanish friend’s house, but I also added some adjustments of my own.

The main ingredient is chicken drumsticks, which are easily available, and seasoned broad beans are added to the side dishes, which is glutinous and delicious. The rice at the bottom of the pot will also form a layer of crispy rice burnt, crispy and puffy, and tastes not greasy or greasy. No wonder this bowl of rice dares to openly call the Cantonese-style claypot rice!

  • Add 10 saffron to warm water and soak in washed pearl rice for 1 hour

  • Remove the bones of the chicken thighs, cut into large pieces, add 1 teaspoon of salt, 1 teaspoon of black pepper, and marinate for 15 minutes.

  • Cut green beans into small pieces, peeled tomatoes, red onions, parsley, and peppers into small pieces

  • Squeeze the broad bean shells and squeeze out the broad bean kernels for later use

  • Tips

    1. After the rice is soaked with saffron, the color changes to golden, and it also reveals a subtle aroma. If you don’t have saffron, you can use turmeric powder or curry powder instead, but the flavor will be different~

    2. Broad beans can be replaced with peas if you can’t buy them.
